Feijoa pancakes are a dish using fruit that is a cross between starfruit, guava, pineapple, and a pear. This pulpy fruit can be scooped out and mixed with traditional pancake batter to make feijoa pancakes. When prepared, the pancakes will possess the sweet aromatic flavor of the fruit.

The Feijoa is grown in South America, Russia, Australia, New Zealand, and Iran. It has a dark green exterior skin with a slightly grainy inner skin surrounding a pulpy center that grows softer as it ripens.

The best way to consume the feijoa fruit is to chop the fruit in half. Scoop out the softer insides and chop it into smaller pieces. Add it to the pancake mix and then pour the mixture on the grill to cook the pancakes like normal until slightly browned on both sides. The place them on a platter or plate and serve with butter and your preferred flavor of syrup.
